Our Ghee
Lee's Ghee is hand crafted in small batches using unsalted, organic, cultured butter as a base for all of our flavours. Cultured ghee is marginally healthier than regular ghee and the bacterial cultures present in the ghee improve the flavour over time, much like a good wine or cheese. The culturing process stops when ghee is refrigerated, so you have the option of letting it age unrefrigerated or keeping it in the fridge for a sweeter taste.
Our butter is sourced locally in Ontario from Organic Meadow. Our butter is Certified Organic, so the cows must eat primarily grass. Throughout the warm months this is more obvious since they are on pasture between approximately April and November eating what they graze. During the winter months, the cows eat primarily grass that the farmers collect during harvest and store.
To make our ghee infusions, we add organic spices and herbs to our ghee and let them infuse for minimum two weeks. This also allows the culturing process to begin, lending to the characteristic cultured flavour of our ghee. According to Ayurveda (traditional Indian medicine), ghee aids in absorption of fat-soluble spices and herbs such as turmeric and cardamom, thereby increasing their medicinal value.
