This class focuses on how to make traditional cultured ghee in the style of Ayurveda (traditional Indian medicine). We will learn the process of making ghee and infusing it with seasonal organic herbs and spices according to our unique tastes and constitutions. Each participant will take home a jar of ghee and some "gheelicious" recipes!"

One cold evening in February, Lee will be preparing and serving up a heart-warming meal based on the principles of Ayurveda (traditional Indian medicine). By carefully combining warming spices, organic ghee and wholesome ingredients, Lee will create a balanced, simple, tri-doshic vegetarian meal that nourishes the body, mind and spirit.
All are welcome, but seating is limited so arrive early! Dinners can also be ordered to-go, and you're welcome to bring your own container if you like. First come, first serve.

Warming Kitchari with Root Vegetables - $8
Spelt and Gram Flour Chapatis with Lee's Ghee - $2 each

Kitchari is a simple stew of basmati rice and split mung beans, which is suitable for every dosha. There are endless variations on this staple food from India depending on the herbs, spices and vegetables used. Kitchari is the primary food used in Ayurvedic Medicine, because it is easy to digest and assimilate the nutrients from the food.
The nutritional benefits of this dish, according to Ayurveda, are as follows:
