chewy Rosemary Pistachio Cookies
Recipe adapted from the 4-Hour Chef
The recipe uses the reaction between butter and sugar (known as the Maillard Reaction) to make the perfect textured cookie, that is caramelized on the bottom, but still chewy. Using ghee in place of butter makes the cookies extra buttery and delicious.
- 1 cup of Plain Jane ghee, at room temperature
- 1 1/2 cups of light brown sugar
- 2 1/2 cups self-rising flour or 3 1/2 cups gluten-free all purpose flour
- 2 large eggs
- 1/2 cup pistachios, shelled
- 1 cup white chocolate chips
- 1 tablespoon of rosemary leaves
- 1 teaspoon baking powder (if you chose the gluten-free option).
Preheat oven to 375. Beat butter and sugar until smooth using a hand mixer or wooden spoon. Add flour and mix in thoroughly. Beat in two eggs, one at a time. Stir in pistachios, white chocolate chips, rosemary and baking powder (if using). Roll into 1″ balls. Bake for 10 minutes until brown.
